The other day on The View I saw this great idea - using egglant in subtitution for noodles. I am making a dish tonight, that will have sauteed shrimp, mushrooms, onions, zuchinni, sun dried tomatoes and eggplant noodles with a garlic truffle sauce.
Eggplants are jam packed with antioxidants and are high in fiber, but low in fat and calories. They are definitley low gi. Below is a link that has a tasty recipe, but also shows you how to prepare eggplant as noodles. Enjoy!

I forwarded this to my ex-girlfriend because she loves eggplant, and used to always find an excuse to cook it. I didn't particularly like it because she ruined it for me after making lasagne with it. She really liked your idea and is going to make it this way, she found the recipe at the link.
ReplyDeleteIt'll be cool when your book comes out. I have a hard time with anything dairy based, and am trying to lay off sugars and carb based stuff. You've got some good recipies coming in that book?!
The only time I compromise and eat tons of noodles has been Chinese food. Lo Mein is my weakness...I wonder if there is an alternative that would still maintain the same consistency and taste? Squash you think?
Thank you for forwarding this on! I cooked the eggplant tonight and it was good, but I learned that it is important to use kosher salt, which is coarser than regular salt, when "sweating" the eggplant before you cook it.
